Cauliflower is a fantastic skin saving food, and I’m always looking for ways to incorporate it into our meals. There’s a reason I consider it such a great skin saving food: it is absolutely packed with powerful nutrients.
To start with, it contains a compound called quercetin, which is a potent antioxidant.
It’s also a great source of fiber, which serves as a prebiotic and helps maintain gut health.
Cauliflower is also a cruciferous vegetable, and that means that it’s part of a group called the "detox vegetables". Cauliflower contains glucosinolates, which help detoxify harmful substances in the body.
There are more amazing ingredients that promote skin health, but these ingredients are a great place to start.
Adding cauliflower into these mini breakfast quiches is a simple way to add vegetables to breakfast. As a bonus, you can make these the day before and just quickly heat them up in the morning, making for a fast and healthy breakfast.
Ingredients
1/2 cup cooked cauliflower, chopped
3 eggs, beaten
1/2 cup milk (dairy or non-dairy)
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon salt, or to taste
Topping
2 tablespoons feta cheese
Directions
1. Preheat oven to 400°
2. Using a 6-cup muffin tin, grease with cooking spray
3. Divide cauliflower among the cups
4. Beat together remaining ingredients and pour into muffin tin
5. Scatter feta cheese on top
6. Bake for 15 minutes
